Any recommendations for a lower cost alternative to the eVGA Geforce GTX 260 Core 216 896MB DDR3 PCI-E for use with the Gigabyte GA-P55A-UD4P MB?

Won't be gaming. Only some minor graphics stuff (& general PC uses).

Thanks

Since you're not gaming, you could use something like a GT240 or even this GT430. http://www.newegg.com/Product/Product.aspx?Item=N82E16814121397

btw - why aren't the onboard graphics of the 2600K adequate anyway?

It depends. If you have a P67 motherboard, you'll need a dedicated video card. If you have the H67, then the cpu can adequately handle the graphics. (at least that's my understanding of it)
