PCI Express 2.0 graphics cards will work in regular slots, right? But what all are you losing? Is it better to stick with non-2.0 cards?

If you look at the PCI 2.0 section, it says that such cards are backwards compatible, but your card will perform better if the motherboard supports PCI 2.0.
The P35 chipset doesn't offer PCI 2.0 support - this is only available on the Intel X38/48 chipsets, and the nVidia 7xx series.

How would this card work in a non-2.0 slot? My sister is looking to upgrade and she's a gamer (mainly FFXI and Oblivion).

The 8800GT is a very good card. It runs a little on the hot side, and its kinda loud. Otherwise its a very high performance video card, and should play most games at high settings.
