Do any of you use Foxit instead of adobe reader?
If so, any pros or cons?

I'm a big fan of Foxit - very lightweight, very fast, very easy to use. It really is a lot faster than Adobe, but has only a fraction of the features. Since I only use it to read PDF files, its great for me, but Adobe Reader is the one to go for if you need to manipulate PDF files a lot.

When I go to foxit site I see several download files. Assume the .exe is the one I need but what about the .msi version?
Do I need the toolbar?

The .msi is the Microsoft format for installation files. Basically, this allows it to be distributed over networks a lot more easily than an .exe.
Just use the .exe file, but both will work. Oh, and you don't need the toolbar. :)
